Australia is the world's smallest continent and largest island. It covers an area of 7,682,300 square kilometres, about the same size as the 48 mainland states of the USA. It has the lowest population density in the world. Only 2 people per square kilometre.
For more than 40,000 years Australia's Aboriginal people have lived and thrived in Australia's unique and challenging environment. A nomadic lifestyle helped them adapt to the seemingly inhospitable land. Their cuture is unique and their history espressed in an oral tradition. Today they are believed to be the world's oldest continuous civilization.
There is enough fuel in a full tank of a jumbo jet to drive an average car four times around the world!

When traveling one of the true delights is immersing yourself in the local culinary culture. Sampling popular local food and tradional tastes, This is not exclusive to gourmet restaurant cuisine, but rather, taking the time to sample local produce, ingredients, wines and dishes. Ask a local for a recommendation and as the saying goes 'When in Rome, do as the Romans do'!
Our recipe this edition comes from our feature destination, Australia and is a favorite sweet afternoon dish!
Lamingtons!

For those who don't know, lamingtons consist of a square piece of sponge cake (usually at least a day old) which is cut in half and layered with strawberry jam and whipped cream, Both pieces are then sandwiched, then dropped in chocolate ganache and then coated in desicated coconut.
30cmx30cm sponge cake (butter-cake, madeira cake or genoise) 400ml cream, 250g couveture chocolate, 200ml whipped cream, 200g strawberry or rasberry jam, 100g desicated coconut.
To make the chocolate ganache required for lamingtons it should be very wet so that the sponge cake absorbs some of the chocolate. Place 400ml cream in a saucepan over high heat and bring just to a boil, then remove the pan from the heat. Meanwhile, chop chocolate into small pieces, then add chopped chocolate to the cream, whilst whisking vigorously until the chocolate and cream are thoroughly mixed. The mixture will slightly solidify as it cools, To make the cream, simply whip. The cream won't require any sugar at all, Then cut the sponge cake into 4cm cubes, then cut them in half, On one half, layer the jam and on the other side layer with cream, Then sandwich the halves together. Then make a production line of sponge, chocolate ganache and coconut in a shallow container or plate, and a cooling rack with paper underneath, Using a fork dip the sponge into the chocolate, then roll it in the coconut covering it well, and then place onto the rack to dry!

Made of arkosic sandstone, Uluru changes color in different lights, particularly at sunrise and sunset, an opportune time to take advantage of the famous 'Sounds of Silence dinner'-
Daintree Rainforest:

Reef and rainforest come together in this region of the World Heritage protected beauty. The Daintree River winds gently through tangled woodland through jungle homes of unique birds, pythons and crocodiles, north to Cape Tribulation, a spectacular national park.
The 12 Apostles:

Located along the spectacular Great Ocean Road in Victoria, the 12 Apostles stand as sentinels against a dramatic backdrop of sheer cliff face and wild ocean. Formed over thousands of years by the action of the sea, only eight of the original 12 Apostles remain.
The Great Barrier Reef:

Australia's most famous natural wonder, the Great Barrier Reef is absolutely stunning. It contains more than 1,000 islands, from sandy cays to rainforest isles. The beauty of the waters and prolific life it supports need to be experienced. Scuba diving and snorkeling allow for more intimate reef viewing.
Sydney Opera House:

Situated on Bennelong Point in Sydney Harbour, with parklands to its south and close to the enormous Sydney Harbour Bridge, the Sydney Opera House and its surrounding form an iconic Australian image. It is also one of the most famous performing arts venues in the world.
